Derived from the Italian word spiedo, meaning "skewer" or "spit," spiedini are ingredients carefully threaded onto skewers and cooked over an open flame. Found throughout Italy in countless regional variations, spiedini showcase how simple ingredients become something extraordinary through fire, smoke, and careful preparation.

For this experience, the Mattina team creates a seasonal progression of wood-fired spiedini that reflects the freshest ingredients available each day.  The result is a menu that is both rustic and refined, designed to be enjoyed at a leisurely pace.
