Chef Quang Nguyen, a Wildair alum, brings that same gutsy, unserious spirit to ambitious small plates and grower wines—New York's answer to Paris's beloved neo-bistros.

Chef Quang Nguyen will curate a tasting menu spanning Italy, France, and Spain—Crab Casino with Café Paris butter, scallop crudo with gremolata, and arroz a la plancha layered with taleggio and fontal. Larger plates like lobster au poivre and monkfish with clams round out a playful, ingredient-driven journey rooted in Demo's natural wine ethos.
