From the moment you claim your spot at the counter, José operates on its own terms—and those terms happen to be the best possible ones. The room is small, the noise is generous, and the energy is unmistakably that of a place that has been full every night since it opened and expects to remain so.

This is Bermondsey Street by way of Andalucía, with a detour through La Boquería. José Pizarro's flagship captures something that most Spanish restaurants in London spend considerable effort trying to manufacture and never quite achieve: the feeling that the food is incidental to the gathering, and yet somehow the best thing you'll eat all week. The Ibérico ham is carved to order at the counter, each slice falling with that particular looseness that tells you the pig lived well and the curing was patient. It arrives without fanfare, which is exactly right.

The menu is a daily negotiation between the kitchen and the market. A fino Sherry to open—cold, bone-dry, and non-negotiable—followed perhaps by a Galician Albariño alongside the seafood, then something from Ribera del Duero with enough structure to hold its own against the cured meats and richer plates.
