Founded in 2024 in Paris by Italian duo Cecilia Spurio and Eugenio Anfuso, Amâlia is the culmination of a remarkable journey across Europe. Spurio, who transitioned from a career in law to become a Michelin-starred pastry chef, joins forces with Anfuso, whose experience in haute gastronomy includes time with Enrico Bartolini, Igles Corelli, Pierre Gagnaire, and Yannick Alléno. Together, they present a bold, modern interpretation of French cuisine, subtly enriched with Italian influences and global nuance.
