The evening begins with a glass of Champagne, served by the sommelier, who introduces what’s to come: a fluid five-course tasting menu inspired by the Loire Valley, shaped by Drapeau’s travels through France’s provinces, and invigorated by his adopted home of Thailand. When a sudden knock echoes through the room and the velvet curtain parts, Drapeau and his brigade appear—poised, precise, and ready to transform ingredients into emotion. What follows is a nine-course culinary symphony, each dish an act in the chef’s ongoing story of nature, memory, and reinvention.
