At two Michelin stars, A. Wong presents one of the most intellectually ambitious tasting experiences in modern gastronomy. In the intimate dining room in Pimlico, guests embark on a chef’s choice journey curated by Andrew Wong, whose work explores the breadth of China’s 14 culinary regions through a lens of scholarship, memory, and innovation. The menu unfolds as a carefully choreographed narrative—beginning perhaps with the delicacy of Cantonese dim sum craftsmanship before moving through the nuanced fermentations of Sichuan, the wheat-led traditions of the north, or the minority cuisines of Yunnan—each course reflecting years of archival research and field study. British and Chinese ingredients are interwoven with technical precision, creating dishes that feel both ancient and startlingly contemporary.

This experience unfolds as a three-hour, multi-course journey exploring China’s 14 international borders, celebrating the five fundamental flavors—sweet, sour, salty, bitter, and spicy—alongside more than 3,000 years of culinary technique and history.  Introduced through a philosophy of migration, geography, preservation, and evolution, the menu reflects Wong’s dual identity—British-born, deeply rooted in Chinese heritage—brought to life through warm yet precise service that guides guests across textures, techniques, and rarely encountered culinary histories.
