Made To Taste London Sessions: Bubbles & Birds

There is roast chicken, and then there is Poulet.

Tucked beneath the railway arches of Maltby Street in Bermondsey, Poulet has built its reputation around exceptional British free-range chicken, roasted until the skin is deeply golden, the meat is impossibly juicy and the bird earns every bit of the attention it gets.

We’re calling it what it is: the best roast chicken in London.

But tonight, the chicken has a serious partner in crime.

Alongside it comes a flight of hard-to-find Grower Champagnes and limited-production sparkling wines—bottles chosen for their character, rarity and sense of place rather than their name on the label.

These are the kind of Champagnes that reward curiosity: small producers, limited quantities and wines you’re unlikely to find sitting on every restaurant list. Over a flight of pours, we’ll explore different expressions of Champagne and sparkling wine, with stories behind the growers, the vineyards and the bottles themselves.

A whole rotisserie chicken takes centre stage, accompanied by seasonal sides, sauces and all the things that make a great roast feel like a proper occasion. The richness and crispness of the bird make a remarkably good partner for Champagne—especially when the bottles in the glass have this much personality.

Maltby Street brings another layer to the table. We’ll be joined by some of the independent makers from around the arches, with exceptional bread, cheese, charcuterie and something sweet adding to the feast.

The setting is relaxed, lively and unmistakably Bermondsey: railway arches, great food, great bottles and twenty people around a table with nowhere else they need to be.
