Netsu Warayaki & Sake Journey

This transportive experience is an intimate exploration of Japanese fire cooking, craftsmanship, and conviviality, revealed after the restaurant’s energy has fully come alive.

The evening begins with a guided arrival into Netsu’s dramatic dining room, where polished concrete, stacked sake barrels, and graphic kabuki artwork frame the glow of the open straw-fire grill. Guests are seated at a preferred counter-position near the warayaki flames, offering a direct view of the chefs as rice straw is ignited in bursts of brilliant orange, filling the space with aroma, heat, and anticipation.

The Chef’s Choice tasting menu, curated for the evening by the kitchen, is shaped around the fire itself, progressing from delicate raw preparations to deeply aromatic straw-fired dishes. Signature Net­s­u plates are reinterpreted alongside off-menu courses created for this experience, including a surprise warayaki preparation.

Throughout the meal, the resident Sake Sommelier hosts a guided pairing journey, pouring rare and small-production artisanal sakes selected specifically for each course. Served in distinctive sake vessels chosen to match the character of each pour, the pairings explore texture, temperature, and umami, revealing how sake evolves alongside flame, smoke, and spice. Between courses, the sommelier shares stories of producers, regions, and traditions, creating a relaxed masterclass that feels personal.

As the evening winds down, dessert is presented as a final gesture, a Japanese-inspired sweet, subtly infused with smoke or char. The experience concludes with a small takeaway: a beautifully wrapped Netsu sake cup and tasting card, allowing guests to carry the memory of the evening home.
